Slow Cooked Pulled Pork

When the price is right, you need to strike! The local grocery store had a sale on Pork Butt, Tenderloin and the works, hence the reason I am focusing on pork so much this week, the sales were awesome! Tonight I'm making a family favorite, pulled pork sandwiches. This recipe is so simple and the secret ingredient? ROOT BEER! I like A & W , but whatever root beer you want works the same. Also, there is alot of play room with this recipe. I add a half a chopped onion, and two minced garlic cloves and about a teaspoon of liquid smoke for that yummy smokey flavor without dealing with the grill. This is ideal for busy work days, when you want a good hot meal with minimal efforts. I've crocked alot this last two weeks because my schedule has been so crazy, and tonight.... it's BBQ Baby! Slow Cooked Pulled Pork 

1 (2 pound) pork tenderloin
1 (12 fluid ounce) can or bottle root beer
1 (18 ounce) bottle your favorite barbecue sauce
8 hamburger buns, split and lightly toasted

Directions 

Place the pork tenderloin in a slow cooker; pour the root beer over the meat. Cover and cook on low until well cooked and the pork shreds easily, 6 to 7 hours. Note: the actual length of time may vary according to individual slow cooker. Drain well. Stir in barbecue sauce. Serve over hamburger buns.

LOW CARB Crock Pot Herb Pork Chops

I am not a huge pork chop fan, particularly fried pork chops, call it "eating a lot of it growing up" because that's what we had available. This version is a wonderful way to cook pork--it's extremely tasty and tender. With a mixture of spices and garlic, it's terrific. And it is extremely EASY. What makes it even better for me and my low carb friends, is it's only 4g of carbohydrates per serving. Add a side of steamed broccoli, mocafoni and cheese or mock mashed potatoes and you have a perfect low carb meal. Above all, this is done in the crock pot so when you're busy and can't slave over the stove, set it and go.
You can double and triple this recipe with ease for larger families and bigger crock pots. :) Enjoy!!

Crock Pot Herb Pork Chops 

1/4 cup olive oil 1 cup chicken broth
2 cloves garlic, minced
1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon poultry seasoning
1 teaspoon dried oregano
1 teaspoon dried basil
4 thick cut boneless pork chops
salt and pepper to taste

Directions 

In a large bowl, whisk together the olive oil, chicken broth, garlic, paprika, garlic powder, poultry seasoning, oregano, and basil. Pour into the slow cooker. Cut small slits in each pork chop with the tip of a knife, and season lightly with salt and pepper. Place pork chops into the slow cooker, cover, and cook on High for 4 hours. Baste periodically with the sauce.

Crock Pot Buffalo Wings


Crock Pot Buffalo Wings 

1 (12 ounce) bottle favorite hot wing sauce ( I like Louisiana)
1/2 cup butter
2 tablespoons Worcestershire sauce
2 teaspoons dried oregano
2 teaspoons onion powder
2 teaspoons garlic powder
1 (4 pound) frozen chicken wing sections, thawed 1/2 cup butter
 1 (12 ounce) bottle favorite hot wing sauce
Directions:
Combine 1 bottle hot pepper sauce, 1/2 cup butter, Worcestershire sauce, oregano, onion powder, and garlic powder in a saucepan over medium heat. Bring mixture to a boil, reduce heat to low, and simmer for 5 minutes. Place chicken wings into slow cooker and pour sauce mixture over wings. Cook on High for 2 hours. Reduce heat to Low; cook 2 hours more. Preheat oven to 400 degrees F (200 degrees C). Grease several baking sheets. Spread wings onto prepared baking sheets and bake in preheated oven until wings are crisp and browned, about 30 minutes. Melt 1/2 cup butter with 1 bottle hot sauce in a small saucepan and simmer until thickened, about 20 minutes. Brush sauce onto wings just before serving.

Crock Pot Pizza Casserole

This week has been a super busy week getting ready for Halloween, so since we are on the go so much , we have used the crock pot every day this week to prepare dinner in my kiddos favorite foods. They LOVE pizza and this is a great version! You can add fresh uncooked chopped bell pepper, olives, mushrooms etc. to make it a supreme pizza casserole.

Crock Pot Pizza
1 pound of ground Italian sausage, browned and drained
½ pound of ground beef, browned and drained
1/2  large white onion, chopped
8 ounce box of short pasta (rigatoni, penne or ziti), cooked… but undercooked slightly
(3) 14 ounce jars of pizza sauce
2 teaspoons of Italian seasoning
2 cloves garlic, chopped
8 ounce package of sliced pepperoni, placed between paper towels and microwaved for a few seconds to remove all the grease 16 ounces of shredded mozzarella cheese

Directions 
 In a large bowl mix everything together except for the mozzarella cheese Spray the inside of a 4 – 6 quart Crock-Pot with non-stick spray Layer the mixture alternately with the shredded mozzarella cheese (three layers, ending with the cheese on top) Cover and cook on LOW for 3 1/2 – 4 hours. If cooked for longer than 4 hours or on high it may burn, 3 hours works best for my crock pot.

Crock Pot Chicken 'N Dumplings


This is an easy slow cooker recipe that cooks while you are at work! It is wonderful on a cold day!

 Crock Pot Chicken 'N Dumplings 

4 skinless, boneless chicken breast halves
2 tablespoons butter
2 (10.75 ounce) cans condensed cream of chicken soup
1 onion, finely diced
2 (10 ounce) packages refrigerated biscuit dough, torn into pieces

Directions
  Place the chicken, butter, soup, and onion in a slow cooker, and fill with enough water to cover. Cover, and cook for 5 to 6 hours on High. About 30 minutes before serving, place the torn biscuit dough in the slow cooker. Cook until the dough is no longer raw in the center.

Cold Day Chili

Nothing is better than a warm bowl of chili on a cold day. Being a working mom, running a  full time business, sometimes I am just to pooped to really want to cook, although , cooking is one of my favorite things to do. Here come's the crock pot!

This recipe can be done on stove top or in the crock pot, so I have added the instructions for both.

Cold Day Chili


2 pounds lean ground beef
1 (46 fluid ounce) can tomato juice
1 (29 ounce) can tomato sauce
1 (15 ounce) can kidney beans, drained and rinsed
1 (15 ounce) can pinto beans, drained and rinsed
1 1/2 cups chopped onion
1/4 cup chopped green bell pepper
1/8 teaspoon ground cayenne pepper
1/2 teaspoon white sugar
1/2 teaspoon dried oregano
1/2 teaspoon ground black pepper
1 teaspoon salt
1 1/2 teaspoons ground cumin
1/4 cup chili powder

Directions

Place ground beef in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, and crumble. In a large pot over high heat combine the ground beef, tomato juice, tomato sauce, kidney beans, pinto beans, onions, bell pepper, cayenne pepper, sugar, oregano, ground black pepper, salt, cumin and chili powder. Bring to a boil, then reduce heat to low. Simmer for 1 1/2 hours. (Note: If using a slow cooker, set on low, add ingredients, and cook for 8 to 10 hours.)

Slow Cooker French Dip

This makes a delicious French dip sandwich, perfect for the working mom! Nobody, not even teetotalers, have been able to detect the presence of beer in this recipe, but it adds a wonderful flavor! French fries make a great side dish, and they are good for dipping, too. Slow Cooker French Dip 4 pounds rump roast 1 (10.5 ounce) can beef broth 1 (10.5 ounce) can condensed French onion soup 1 (12 fluid ounce) can or bottle beer 6 French rolls 2 tablespoons butter Directions Trim excess fat from the rump roast, and place in a slow cooker. Add the beef broth, onion soup and beer. Cook on Low setting for 7 hours. Preheat oven to 350 degrees F (175 degrees C). Split French rolls, and spread with butter. Bake 10 minutes, or until heated through. Slice the meat on the diagonal, and place on the rolls. Serve the sauce for dipping.
